Double-Chocolate Chubbies

2 – 1 oz squares unsweetened baking chocolate
3/4 c semi-sweet chocolate chips
1/3 c butter
3 large eggs
1 c sugar
1/4 c all-purpose flour
1/2 t  baking powder
1/8 t salt
2 c semi-sweet chocolate chips (or mint chips)
1  – 4 oz white chocolate bar, chopped
2 c walnuts, chopped

Combine first three ingredients in a saucepan; cook, stirring often, over low heat until chocolate melts. Remove from heat & cool slightly. Beat eggs & sugar at medium until smooth. Add chocolate mixture, beating well. Combine flour, baking powder & salt. Add to chocolate mixture, stirring until moistened. Fold in chocolate chips, white chocolate & walnuts. Drop by tablespoonfuls onto greased baking sheets. Bake at 325 for 12-15 minutes.

Oatmeal Scotchies

1-1/4 c unsifted flour
1 t baking soda
1/2 t salt
1/2 t cinnamon
1 c butter, softened
3/4 c brown sugar, firmly packed
3/4 c granulated sugar
2 eggs
1 t vanilla
3 c old-fashioned oats
11 oz butterscotch chips

Preheat oven to 375. Combine flour, baking soda, salt & cinnamon. Cream butter, sugars, eggs and vanilla in another bowl. Gradually beat flour mixture in. Stir in oats and chips. Drop by tablespoonfuls onto an ungreased baking sheet. Bake 7-8 minutes for chewy cookies, 9-10 minutes for crisp cookies. Cool on baking sheets for 2 minutes, remove to wire racks  to cool completely.

Pan Variation: Grease 15×10 jelly-roll pan, prepare dough as above, spread in prepared pan & bake for 18-22 minutes or until lightly browned. Cool completely in pan on wire rack.

Carrot Cake

2 c flour (for high altitudes, add 3T more)
1 t baking soda
2 t cinnamon
1 t salt
2 c sugar
1-1/2 c oil
3 eggs
2 c carrots, grated
1 c crushed pineapple, drained
1 c coconut
1 c chopped walnuts
1 t vanilla

Bake at 350 for 1 hour. Frost with Cream Cheese Frosting.

Cream Cheese Frosting
4 oz cream cheese
1/4 c margarine
1 lb powdered sugar
1 t vanilla

Low-Carb Cole Slaw

Ingredients:

  • One 16-oz. package of slaw mix (or equivalent in chopped cabbage)
  • 4 T vinegar
  • 2 T balsamic vinegar
  • 1/3 c mayonnaise
  • 1/3 c sour cream
  • 3-4 tsp sugar-free sweetener
  • black pepper to taste

Combine all ingredients, and mix well. Chill before serving.

Molasses Sugar Cookies

These cookies are super easy but super good – a favorite in several Henrichsen homes at Christmastime.

Ingredients:

  • 3/4 c shortening
  • 1 c sugar
  • 1/4 c molasses
  • 1 egg
  • 1/2 t salt
  • 2 t baking soda
  • 2 c flour
  • 1/2 t ground cloves
  • 1/2 t ginger
  • 1 t cinnamon

Mix well. Roll into balls, then roll in sugar. Bake at 350 for 8-10 minutes.
