Tilapia Parmesan

Ingredients:

  • 2 lb. tilapia fillets, thawed if frozen
  • 2 Tbsp. lemon juice
  • 1/2 cup grated Parmesan cheese
  • 4 Tbsp. butter, room temperature
  • 3 Tbsp. mayonnaise
  • 3 Tbsp. finely chopped green onions
  • 1/4 tsp. seasoned salt (I use Lawry’s)
  • 1/4 tsp. dried basil
  • black pepper to taste

Preheat oven to 350 degrees. In buttered 13″ X 9″ baking dish, lay fillets in single layer. Do not stack fillets. Brush top with lemon juice. In bowl, combine cheese, butter, mayonnaise, onions, and seasonings. Mix well with fork. Bake fish in preheated oven 10-20 minutes or until fish just starts to flake. Spread with cheese mixture and bake until golden brown, about 5 minutes. Note: This can also be made in a broiler. Broil 3-4 minutes or until almost done. Add cheese and broil another 2-3 minutes or until browned.

Pancakes

Ingredients:

  • 2 cups milk w/ 2 t vinegar
  • 2 eggs
  • 2 c flour
  • 2 t baking powder
  • 1 t baking soda
  • 1 t salt
  • 2 T sugar
  • 1/4 c oil or melted butter

Sour the milk with vinegar and let it set for a couple of minutes. Beat the eggs in with the milk, then stir in the dry ingredients. Add the oil. Serves 3-4.

White Batter Bread

Ingredients:

  • 6-1/2 cups all purpose flour
  • 2 packages active dry yeast
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 3 cups warm water
  • 2 tablespoons butter

More butter In a large bowl, combine 3-1/2 cups flour, yeast, sugar and salt; mix well. Add the warm water and 2 tablespoons butter; blend at low speed until combine, then beat 3 minutes at medium speed. Gradually stir in rest of flour by hand to make a stiff batter. Cover and let rise until double, about 1/2 hour.

Stir down batter and spread in two greased 9×5-inch loaf pans. Cover and let rise until batter reaches the tops of the pans, about 20-30 minutes.

Bake in preheated 375 degrees F oven for 35-40 minutes until golden brown and firm. Remove from pans and brush tops with butter.

Maple Syrup

Ingredients:

  • 3 cups sugar
  • 1 cup brown sugar
  • 2 cups water
  • 1 tsp maple flavor
  • 2 tsp vanilla extract

Mix sugar and water, and bring to a boil for one minute. Allow sugar water to cool for 5-10 minutes, then add flavorings and stir. Leftover syrup can be refrigerated and reheated in the micorwave next time. Note: A 2:1 white sugar to water ratio can be used as a base for other flavors of syrup: Add 1/2 cup fresh or frozen blueberries, strawberries, etc. to 2 cups sugar in 1 cup boiling water for yummy fruit syrup.

Yeasted Waffles

Ingredients:

  • 1-3/4 cups milk
  • 1 stick unsalted butter, cut into 8 pcs.
  • 2 cups flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1-1/3 tsp. rapid-rise yeast
  • 2 lg. eggs
  • 1 tsp. vanilla extract

Heat 1 cup of the milk and the butter in the microwave until butter is almost melted. Add remaining 3/4 cup of milk to cool. Whisk dry ingredients in a large bowl. Gradually whisk in the milk until well blended. In a small bowl, whisk the eggs and vanilla. Whisk the eggs into the batter until blended. Scrape sides of bowl with a rubber spatula, cover the bowl tightly with plastic wrap, and REFRIGERATE OVERNIGHT.

Heat the waffle iron. Remove the batter from the refrigerator. It will be doubled in size. Stir it down to deflate. Bake waffles according to your waffle iron’s directions. Serve immediately. Makes about 6 round (7-inch) waffles or 4 square (9-inch) waffles.
