Southwestern Chicken Spirals

  • 1 7-oz jar roasted red bell peppers
  • 2 cups chopped cooked chicken
  • 1 8-oz package cream cheese, softened
  • 1 0.4-oz envelope Ranch-style buttermilk dressing mix
  • 1/4 cup chopped ripe olives
  • 1/2 small onion, chopped
  • 1 4.5-oz can chopped green chilies, drained
  • 2 TBSP chopped fresh cilantro
  • 1/2 tsp pepper
  • 1/4 cup pine nuts (optional)
  • 8 6-inch flour tortillas

Drain and chop roasted red bell peppers. Stir together roasted red bell peppers, chicken and next 7 ingredients. cover and chill at least 2 hours. Stir in pine nuts (if desired) Spoon evenly over tortillas and roll up. Cut each roll into five slices, securing with a toothpick. Garnish with cilantro, if desired.
