Sweet Black Bean Salsa

Ingredients:

  • 3 fresh ears corn
  • 3-4 TBSP of lime juice
  • 2 TBSP olive oil
  • 1 TBSP red wine vinegar
  • 1 tsp salt
  • ½ tsp pepper
  • 2 (15oz) cans black beans, rinsed and drain
  • 2 lg tomatoes, seeded and chopped
  • 3 jalapeño peppers, seeded and chopped
  • 1 small purple onion-chopped
  • ¼ c. fresh cilantro

Cook corn for 5 min. Cool and cut from cob. Whisk together lime juice and next 4 ingredients. Add corn, beans and remaining ingredients. Chill 2 hours.
