Grandma’s Caramels


  • 1 quart whipping cream
  • 4 cups sugar
  • 2 cups white corn syrup
  • 1/2 tsp. salt
  • 1 can evaporated milk
  • 1 Tbsp vanilla
  • 1 cup nuts (optional)

In a large pan, mix sugar, syrup, salt and 2 cups of whipping cream. Bring to a boil and gradually add remaining cream, stirring constantly. As mixture cools down, slowly add evaporated milk. Cook to firm ball stage, stirring constantly. (Mixture will get darker and begin to pull away from side of pan.) Remove from heat and add vanilla and nuts. Pour into greased 9×13 pan. Let stand 24 hours.
