Adobo Chicken

  • 1/2 lb boneless chicken thighs
  • 2-3 med cloves garlic
  • 1/2 med brown onion, sliced
  • 1/4 cup soy sauce
  • 1/3 cup vinegar
  • 2 tsp sugar
  • 1 tsp ginger (optional)
  • 1 bay leaf (optional)
  • 1 cup water
  • 2 boiled eggs (optional)

Cut up the chicken, slice the onions and mince the garlic. You may want to brown the meat first, but it’s not necessary. Throw everything (except for eggs) into a pot and let it stand for about 5-10 min. Then cover and cook over medium heat for 30-40 minutes. Check after 20 minutes to make sure that there’s still enough liquid. Add water/soy sauce if needed.

Serve over white rice with boiled egg crumbled on top.
