African Curry and Rice

  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cups tomato juice OR a can of diced tomatoes with juice
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup ketchup
  • 1 tablespoon curry powder (I would use mild curry if you are serving to children)
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1/4 cup vinegar
  • 1 cup uncooked long grain rice

Brown ground beef with chopped onion. Drain. Season with salt and pepper, then add tomato juice, Worcestershire sauce and ketchup. Simmer 1/2 hour. Mix curry powder, cornstarch, sugar and vinegar. Add to ground beef mixture. Cook rice as directed on package. Serve curry mixture over rice and offer the following toppings: sliced bananas, Spanish peanuts, and coconut.
