Australian Pavlova

My neighbors in California were from Australia and they made this for me because I asked to taste some authentic Australian cuisine. This is a crispy, fluffy, meringue-like dessert. Yummy!


  • 2 tsp cornstarch
  • 4 egg whites
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 1 tsp vinegar
  • 1 and 1/4 cup whipping cream
  • fruit of your choice for garnish

Preheat oven to 250 degrees. Brush a baking pan with butter or oil. Dust lightly with sifted cornstarch Place egg whites in a mixing bowl. Beat for one minute or until soft peaks form. Gradually add sugar, beating constantly until mixture is thick and glossy and all the sugar has dissolved. Add vanilla and vinegar and beat until well combined. Spread or pipe mixture onto a small area (8 inches or so) onto baking sheet. Bake 1 and 1/4 hours or until pale and crisp. Cool with oven door ajar; when completely cool, slide knife underneath and ease onto serving plate. Place cream in mixing bowl and beat until soft peaks form. Spread cream over top of cooled pavlova. Decorate with fruit (my neighbors used bananas or strawberries most often).
