Baked French Toast

Make this the night before and you’ve got an easy, delicious breakfast in the morning!

Ingredients:
2 loaves cinnamon raisin bread
4 eggs plus 2 egg yolks
1/2 cup sugar
2 cups half and half
2 cups whole milk
1 tablespoon vanilla
1 stick of butter to dot on top (or you can use cream cheese!)
3 tablespoons sugar and 2 teaspoon cinnamon to sprinkle on top

Beat eggs and extra yolks. Stir in sugar. Add half and half, milk and vanilla. In a 9×13 inch pan, layer as follows: layer of bread, egg mixture, layer of bread, egg mixture, layer of bread (will float on top). Cover and refrigerate at least an hour, or overnight.

Dot with butter (or cream cheese), then sprinkle with cinnamon/sugar mixture. Place in a cold oven, uncovered, and heat at 350 for 45 minutes or until golden brown. LET IT REST for 15 minutes before serving. Serve with syrup and berries of your choice OR try making your own Berry Syrup (below).

Berry Syrup:
1 pkg. frozen berries (raspberries, strawberries, blueberries, etc.)
2 c. sugar
1/2 cup water

Bring berries, sugar and water to boil, stirring constantly and smashing berries while cooking. Store in refrigerator.
