BBQ Chicken and Rice Tostadas

  • 4 small flour tortillas
  • 1 cup water
  • 1 cup minute rice, uncooked
  • 1 can chunk chicken
  • 1 can corn, drained
  • 1/2 cup barbecue sauce
  • 1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Spry both sides of tortillas with cooking spray. Place in single layer on baking sheet and bake for 10 minutes. Boil water; add rice. Let stand 5 minutes after cooked. Sitr chicken, corn and bbq sauce into rice; heat on medium and cook and stir for 5 minutes. Spoon onto tortillas and sprinkle with cheese. Enjoy!
