Bed and Breakfast Baked Cheese Omelet
Bed and Breakfast Baked Cheese Omelet (serves 16)
14 eggs plus 3 yolks
1 1/2 c. sour cream
1 1/2 c. cottage cheese
12 oz. cheddar cheese, grated
12 oz. Monterey Jack cheese, grated
3/4 c. (1 1/2 sticks) butter
1 1/2 tsp. baking powder
3/4 c. flour
Optional: 1 can (4-oz) mild diced green chilies, or 1/4 c. minced onion, or 1/2 c. diced cooked ham or bacon
Preheat oven to 350 degrees.
Melt butter; cool. Stir in flour and baking powder to form a smooth paste.
Beat eggs and whisk into flour mixture.
Fold in remaining ingredients.
Pour into a greased 9×13 pan and an 8×8 pan.
Bake for 45 minutes or until puffy and golden.
Serve with avocado slices and/or chili sauce or salsa.
