Carrot Cake

Ingredients:

  • 2 c flour (for high altitudes, add 3T more)
  • 1 t baking soda
  • 2 t cinnamon
  • 1 t salt
  • 2 c sugar
  • 1-1/2 c oil
  • 3 eggs
  • 2 c carrots, grated
  • 1 c crushed pineapple, drained
  • 1 c coconut
  • 1 c chopped walnuts
  • 1 t vanilla

Bake at 350 for 1 hour. Frost with Cream Cheese Frosting.

Cream Cheese Frosting:

  • 4 oz cream cheese
  • 1/4 c margarine
  • 1 lb powdered sugar
  • 1 t vanilla
