Crustless Quiche

Great for breakfast, lunch or dinner!

1/2 cup butter
1/2 cup flour
6 eggs
1 cup milk
1 pound Monterey Jack cheese
1 (3 oz.) package cream cheese, softened
2 cups cottage cheese
1 teaspoon baking powder
1 tsp. salt

In a saucepan, melt butter; stir in flour and whisk until smooth. In a bowl, beat eggs well. Add remaining ingredients and slowly add butter mixture. Stir until well blended. Pour into a well-greased 9×13 inch pan. Bake, uncovered, at 350 degrees for 45 minutes.
