Devanie’s Easy Enchiladas

  • 1 pound ground beef
  • 1/2 Cup Salsa
  • 2 tsp Onion powder
  • 2-3 Cups Shredded Mexican Cheese Blend
  • 12 Corn Tortillas
  • Sour cream and Olives for topping

Enchilada Sauce:

  • 1 6 oz can tomato sauce
  • 1 tsp cumin
  • 1 tsp Salt
  • 1 tsp Chili Powder – or- 1 package McCormic enchilada sauce mix and ingredients to create it

In skilled combine ground beef, salsa and onion powder cook until browned, drain all juices. Warm Corn tortillas fill tortillas with beef mixture and some of the cheese. Wrap while warm. Place in 9X13 baking dish. In sauce pan mix tomato sauce and spices cook until warm and thickened slightly. Pour over the center of all the enchiladas in the baking dish, spread near the edges with a spoon. Top with the rest of the cheese, some sour cream and sliced olives. Bake 400 degrees F for 15 minutes. Serve with extra sour cream. ENJOY!!
