Divine Chicken Divan

  • 1/2 pound broccoli flowerets, cooked (or cooked asparagus spears)
  • 4 boneless, skinless chicken breasts, cooked and cubed
  • 1 cup seasoned bread crumbs
  • 1 tablespoon butter
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon curry powder
  • 1/2 cup mayonnaise
  • 1 cup shredded Cheddar cheese
  • 1 can cream of chicken soup

Arrange broccoli (or asparagus) in the bottom of a 9X13 baking dish; place chicken pieces on top and set aside. Toss together bread crumbs and butter; set aside. Combine soup, lemon juice, curry powder and mayonnaise and spread over the chicken and broccoli. Top with cheese and sprinkle with bread crumbs mixture. Bake at 350 degrees for 25 minutes.
