Killer Peanut Butter Cookies

  • 1/2 cup shortening
  • 1/2 cup peanut butter (Super Chunky Skippy!)
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg, well-beaten
  • 1/2 teaspoon vanilla
  • 1 1/2 cups flour, more or less (enough to hold dough together, but not crumbly)
  • 1 tablespoon baking soda
  • 1/4 teaspoon salt

Cream shortening, peanut butter, and sugars. Add egg and vanilla; mix until light and fluffy. Add dry ingredients, using enough flour to have dough pull away from sides of bowl, but not enough to get crumbly. Roll dough into 1 inch balls and place on ungreased cookie sheet. Flatten slight with palm of hand, then press a criss-cross pattern, using the back of a fork. Bake at 375 degrees for about 9 minutes, or just until set and starting to brown. WATCH CLOSELY! Let cool on cookie sheet for 2 minutes (they will continue to cook and firm up) then transfer to wire rack to cool.
