Mediterranean Chicken

Ingredients:

  • 1/2 cup flour
  • 1 tsp salt
  • 2 – 3 lbs. chicken (can be breasts or whatever)
  • 1/2 cup oil
  • 2 cups finely chopped onion
  • 1/4 cup tomato paste
  • 1 cup water
  • 2 TBSP soy sauce
  • 1/2 tsp ginger
  • 2 cloves garlic, minced
  • 1/2 tsp curry powder

Mix flour and salt. Dredge chicken through mixture. Brown chicken in oil. Remove chicken and add remaining ingredients to pan. Blend well. Replace chicken in sauce. Cover and simmer 30 minutes or until tender. Serve with rice.
