Oatmeal Scotchies

  • 1-1/4 c unsifted flour
  • 1 t baking soda
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1 c butter, softened
  • 3/4 c brown sugar, firmly packed
  • 3/4 c granulated sugar
  • 2 eggs
  • 1 t vanilla
  • 3 c old-fashioned oats
  • 11 oz butterscotch chips

Preheat oven to 375. Combine flour, baking soda, salt & cinnamon. Cream butter, sugars, eggs and vanilla in another bowl. Gradually beat flour mixture in. Stir in oats and chips. Drop by tablespoonfuls onto an ungreased baking sheet. Bake 7-8 minutes for chewy cookies, 9-10 minutes for crisp cookies. Cool on baking sheets for 2 minutes, remove to wire racks  to cool completely.

Pan Variation: Grease 15×10 jelly-roll pan, prepare dough as above, spread in prepared pan & bake for 18-22 minutes or until lightly browned. Cool completely in pan on wire rack.

  1. When I make these cookies, I think they turn out best if I refrigerate the dough for a bit before baking.
    And of course, the dough is really yummy on its own–no baking required!
