Orange Avocado Salad
This salad is super fresh and light and goes great with your favorite Mexican dish–like Cafe Rio Burritos!
1 medium head iceburg lettuce, torn
2 cups torn red leaf lettuce
1 medium ripe avocado, peeled and sliced
1/4 cup orange juice
1 cucumber, sliced
1/2 medium red onion, thinly sliced into rings
1 can mandarin oranges, drained
In a jar with a tight fitting lid, combine dressing ingredients; shake well. Chill. Just before serving, toss greens in a large salad bowl. Dip the avocado slices into orange juice; arrange over greens (discard remaining juices). Add cucumber, onion and oranges. Serve with dressing.
