Pumpkin Cake

Ingredients:

  • 1 pkg. yellow cake mix(save 1 cup of dry mix for topping)
  • 3 egg
  • 1 stick butter or margarine
  • 1 lg can of pumpkin pie filling
  • 2/3 c. evaporated milk

Topping:

  • 1 tsp cinnamon
  • 1 c. of dry cake mix(previously set aside)
  • 1/4 c. melted butter
  • !/2 c. sugar

Mix 1 egg, softened butter and cake mix by hand. Press into greased cake pan(not glass). Mix pumpkin pie filling, 2/3 evaporated milk, and 2 eggs. Pour over crust For the topping blend 1 tsp cinnamon, 1 c. dry cake mix, 1/4 melted butter, 1/2 c. sugar and mix until crumbly and sprinkle over mixture. Bake at 350 for 55 min.
