Shrimp Curry

  • 1 cup cooked salad shrimp (can buy it fresh, frozen, or in a 7 oz. can)
  • 1 can cream of shrimp soup
  • 1/2 teaspoon curry powder
  • 1/2 cup chopped onion
  • 1 tablespoon butter
  • 1 cup sour cream
  • 1 teaspoon lemon juice
  • Hot cooked rice
  • Paprika or fresh cilantro (chopped)

Cook rice and keep hot. In a double boiler (or if you don’t have a double boiler, sit a glass bowl on a pan that has a little boiling water in it) simmer onion and curry powder in butter until tender. Add soup and stir until smooth. Add sour cream, shrimp and lemon juice. Heat through. Serve over rice and sprinkle with paprika or chopped cilantro.
