Spinach Manicotti

  • 10-oz. package frozen chopped spinach
  • 32-oz. jar spaghetti sauce
  • 1 cup water
  • 1 egg
  • 16-oz. carton ricotta cheese
  • 2 8-oz. packages mozerella cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 8-oz. package manicotti, uncooked

Preheat oven to 350 degrees.  Grease a 9×13 baking dish.  Place 1 cup of the spaghetti sauce in bottom of the baking dish.  Stir in water.  Cook spinach according to package directions.  Drain well and squeeze dry; set aside.  In a large ziploc bag place egg, ricotta, 2 cups mozerella, spinach, salt and pepper.  Squish bag contents until combined.  Snip one corner of the bag off  and fill the manicotti shells with the filling.   Place filled manicotti in the baking dish and spoon remaining spaghetti sauce over shells to coat completely.  Cover tightly with foil and bake for 1-1/4 hours.  Sprinkle with remaining 2 cups of mozerella and bake an additional 3-5 minutes or until cheese melts.
