My dad used to make these once in a blue moon and they were always such a treat.
- 2 eggs
- 1 1/4-cup flour
- 2 to 2 1/2-cups milk
- 1 tsp salt butter
Mix eggs, flour and salt. Add the milk, a little at the time, and beat to a smooth and rather thin batter. Heat the skillet, add a little butter and fry the pancakes on both sides. Roll or stack them on a serving plate. Serve hot, preferably with whipped cream, jam, or maple syrup.
