Vegetable Cheese Soup

Help your kids get their daily serving of vegetables with this delicious cheese and vegetable soup recipe.  It’s wonderfully filling and satisfying, especially on a cold day.

In Large pot or crockpot mix:
1 C Celery, diced
1 C Onion (may substitute with 1 Tb powder flakes or other onion)
2 C Potatoes, diced
1 C Carrots, diced
1 bag Frozen Boccoli (fresh works too)
1 Box (2 packets) “Noodle Soup Mix”
Water to cover

Cook until tender then add:
3/4 C Butter
3/4 C Flour

To make a white sauce slowly add:
4 C Milk
8 oz Velveeta Cheese

Stir quickly and constantly until mixture thickens. add to veggies carefully. add water if it is too thick.
