Zesty Pasta Salad

OK, ya’ll, YUM!!!! I worked at a middle school when I lived in Winterset, IA, and on the once-a-month faculty/staff potlucks, the wonderful librarian would bring this. She had to make copies of the recipe for everyone after we all tasted it for the first time!

Dressing:

  • 1 cup oil
  • 1/2 cup apple cider vinegar
  • 1/2 cup white vinegar
  • 3/4 cup sugar
  • 1 TBSP salt (or less if you prefer)
  • 1/2 TBSP pepper
  • 1 TBSP accent
  • 1 TBSP garlic powder
  • 4 TBSP Parsley flakes
  • 3 TBSP dry mustard

Salad:

  • 2 8-oz pkg. of pasta, any kind you like
  • 1 red onion
  • 2 green or yellow peppers
  • 1-2 cucumbers
  • 1 can black olives
  • cherry tomatoes

Combine all dressing ingredients and refrigerate overnight. Shake well. Cook pasta. Combine pasta, veggies, and dressing. Let marinate for 1/2 day. Sprinkle on fresh Parmesan and serve.
